Pumpkin is loaded with an important antioxidant, beta-carotene. Beta-carotene is one of the plant carotenoids that converted to vitamin A in your body. In the conversion to vitamin A, beta carotene performs many important functions in your overall health.
Research today indicates that a diet rich in foods containing beta-carotene may reduce the risk of you developing certain types of cancer and it protect against heart disease. Beta-carotene protect against other diseases as well as some aspects of aging.
You should have at least two items a day from your orange food group if not three.
Ingredients
2 eggs
1 (16 oz) can of pumpkin puree
1 (14 oz) can of sweetened condensed milk
1 tsp of pumpkin pie spice
1 pie shell
Directions
1. Preheat the oven to 425 F.
2. Combine eggs, pumpkin puree, sweetened condensed milk and pumpkin pie spice and mix.
3. Pour the mixture into a pie shell.
4. Bake for 15 minutes at 425 F.
5. Then reduce the heat and bake for 35-40 minuets longer at 350 F.
